Dry Aging
Dry aging is a premium culinary art that completely redefines our perception of flavor and texture. During this process, fresh meat or fish is placed in specialized, precisely controlled aging chambers that maintain the ideal temperature, airflow, and humidity levels.
Over time, natural enzymes begin to break down muscle fibers from within, making the product incredibly tender. Meanwhile, excess moisture gradually evaporates. As a result, the flavor becomes more pronounced, concentrated, and develops a deep, pleasant "umami", the fifth basic taste.


Although the core principle, moisture reduction and flavor concentration, is similar for both meat and fish, the process and approach themselves differ. Beef or other types of meat can spend anywhere from several weeks to months or even years in the chambers. During this time, the meat loses a significant portion of its weight and develops a strong, nutty, and rich flavor profile. Fish is aged for a shorter period and at a lower temperature. Furthermore, fish requires a more rigorous preparation for the dry aging process.
Dry aging is only the first step in our flavor journey. Dry-aged products can be cold-smoked at various stages of maturation, for very different durations, and in smoke profiles of widely varying flavors. This allows us to experiment and create unique flavor combinations, blending the natural tenderness of aged fish or meat with the exquisite smoke nuances provided by carefully selected wood.
